1 lb shrimp , peeled and cleaned
1/2 teaspoon salt
1 pinch white pepper
1 tablespoon chinese black bean sauce , chopped
3 garlic cloves , minced
2 tablespoons minced gingerroot
1 teaspoon sugar
2 tablespoons soy sauce
1 tablespoon white wine
1 tablespoon sesame oil
3 tablespoons cornstarch
2 cups oil , divided
2 cups water , divided

Instructions

1.Slice eggplant into 1 inch thick rounds. Then, using a teaspoon, scoop out the middle to create a cavity.
2.Cut the shrimp into small pieces and season with salt and white pepper. Stuff the shrimp into the eggplant cavities.
3.Mix the black bean sauce, garlic, ginger, sugar, soy sauce, white wine, sesame oil, cornstarch, and 1 cup of water together. Set aside.
4.Heat 1 cup of oil in a frying pan and fry the eggplant until golden brown. Set aside.
5.In a separate pan, heat 1 cup of oil and stir-fry the black bean sauce mixture until fragrant. Add 1 cup of water and bring to a boil.
6.Add the fried eggplant to the black bean sauce and simmer for 5 minutes. Serve hot over rice.
