1/4 cup simple syrup
1 lemon , juice and zest of
1/2 cup water

This blueberry sorbet is a delightful summer dessert with a twist of lemon and tarragon. Instructions

1.In a blender, combine 2 1/2 cups blueberries, 1/4 cup granulated sugar, 2 tablespoons lime juice, 1/4 cup simple syrup, the juice and zest of 1 lemon, and 1/2 cup water.
2.Blend the mixture until smooth and then strain through a fine-mesh sieve.
3.Add a sprig of fresh tarragon to the strained mixture and let it steep for 10 minutes.
4.Remove the tarragon and pour the mixture into an ice cream maker.
5.Churn the mixture according to the manufacturer's instructions until it reaches a sorbet consistency.
6.Serve the sorbet garnished with a few blueberries and fresh tarragon leaves.
