Ingredients

1 1/2 kg blueberries
500 g super gelling sugar ( Dr. Oetker Super Gelling Sugar 3-1 )
35 sage leaves ( see note )
2 1/2 teaspoons gingerroot , freshly grated
4 tablespoons lime juice

Instructions

1.Rinse the blueberries and place them in a large pot. Add the super gelling sugar, sage leaves, freshly grated gingerroot, and lime juice to the pot.
2.Mix all the ingredients together and bring them to a simmer over medium heat. Stirring occasionally, let the mixture cook for around 5-7 minutes or until the sugar dissolves.
3.Increase the heat to high and continue stirring the mixture until it comes to a boil. While it's boiling, skim off any foam that forms on the surface.
4.Cook the jam for another 7-10 minutes or until thickened to the desired consistency.
5.Remove the pot from heat and let the jam cool for 5 minutes.
6.Pour the jam into sterilized jars and let them cool on the counter.
7.Serve the Blueberry-Sage-Ginger Jam as desired.
