2/3 cup warm water , divided
2 tablespoons brown sugar
1 package dry active yeast
3 eggs
5 packets stevia or 3 tablespoons brown sugar
3 cups whole wheat bread flour
2 teaspoons vital wheat gluten
1 teaspoon nutmeg
1/2 teaspoon salt
1/3 cup dried blueberries , soaked in warm water and drained
2 tablespoons malt syrup or 2 tablespoons honey

Instructions

1.In a large bowl, mix 1/3 cup of warm water with brown sugar and active dry yeast. Set aside for 10-15 minutes until it gets foamy.

6.Put a few bagels in the boiling water and cook for one minute on each side. Remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.
7.Make an egg wash by mixing one egg with a tablespoon of water. Brush the top of each bagel with the egg wash, then sprinkle with dried blueberries and a pinch of salt.
8.Bake in the oven for about 20 minutes or until they turn golden brown.
