Ingredients

6 oranges
l2oz/3 cups blueberries
8 fresh lavender , sprigs
2 egg whites
115 g/ 4oz/1/2 cup caster sugar
5 ml/ 1 tsp fresh lavender flowers
This blueberry and orange salad with lavender meringues recipe is a perfect starter to any meal, especially on a warm day. Instructions

1.Preheat your oven to 110C/fan 90C/gas 1/4.
2.Line a baking sheet with baking parchment.
3.In a bowl of a food processor, pulse the lavender sprigs to a paper consistency.
4.Whisk the egg whites until stiff peaks.
5.Add the caster sugar 1 tbsp at a time, whisking until the meringue is thick and glossy.
6.Fold in the lavender flowers.
7.Use a tablespoon to evenly space 16 mounds of meringue on the prepared baking sheet.
8.Bake for 1 hour or until the meringues are firm and dry.
9.Peel and slice the oranges and arrange them on a platter.
10.Scatter the blueberries over the oranges.
11.Crush the lavender meringues over the top of the fruit.
