Ingredients

1 head cauliflower
2 quarts chicken stock ( canned broth or bouillon is ok )
6 tablespoons butter
2/3 cup flour
1 teaspoon nutmeg
1/2 cup half-and-half cream or 1/2 cup milk

Instructions

1.Clean the cauliflower under cold running water and cut it into florets.

6.Puree the mixture in a blender or with an immersion blender until smooth.
7.Adjust the seasoning to taste with salt and pepper.
8.Reheat the soup if necessary and serve hot.
