Blinchatyi Pirog is a traditional Russian dish that is both comforting and delicious. The word 'pirog' is a Russian term for any type of baked or fried pastry, often filled with meat, vegetables, or fruit. This version of the pirog is made with a potato pancake instead of pastry, which makes it lighter and fluffier. The meat and mushroom filling is savory and flavorful, and the pancake adds a delightful sweetness. It's a perfect option for those who want to try something new and exciting.

Instructions

1.In a large bowl, whisk together eggs, sugar, salt, milk, flour, and melted butter until smooth.
2.Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter into the skillet and swirl it around to coat the bottom. Cook for about 2 minutes until the edges start to brown and the top begins to set. Flip and cook for another minute. Repeat until all the batter is used up.
3.In a separate skillet, cook the ground beef until browned. Add the onion and mushrooms and cook until softened. Season with salt and pepper.
4.Preheat the oven to 375°F. Grease a 9-inch round cake pan.
5.To assemble the pie, place 1 pancake in the bottom of the prepared pan. Spread 1/3 of the meat mixture on top. Repeat layers twice, ending with a pancake on top.
6.Bake for 30-35 minutes, until the pancake is lightly browned. Let cool for a few minutes before slicing and serving.
