Ingredients

2 tablespoons all-purpose flour
1 1/2 cups almond and powdered sugar ( see Almond and Sugar Powder )
3 large egg whites , at room temperature
1/8 teaspoon cream of tartar
1 tablespoon superfine sugar
1/2 teaspoon superfine sugar
1/2 cup blanched almond , finely chopped
1 tablespoon blanched almond , finely chopped
confectioners ' sugar
5 tablespoons strained apricot jam
Blidas, also known as French Batter Cookies, are a popular gluten-free cookie enjoyed in France and beyond. These cookies are made from a batter of almond flour, powdered sugar, and egg whites that are whipped until light and airy. Instructions

1.Preheat oven to 325°F (162°C).
2.Line cookie sheets with parchment paper.
3.In a large bowl, whisk together flour, almond and powdered sugar, cream of tartar, and 1 tablespoon superfine sugar.
4.In a separate bowl, beat egg whites and remaining 1/2 teaspoon of superfine sugar until stiff peaks form.
5.Fold in dry ingredients and chopped almonds until combined.
6.Drop batter by spoonfuls onto prepared cookie sheets, leaving about 2 inches in between each cookie.
7.Bake in preheated oven for 20 minutes or until lightly golden.
8.Allow to cool on cookie sheets for a few minutes, then transfer to wire racks to cool completely.
9.Once cookies are cool, spread apricot jam on the bottom of one cookie and make a sandwich with another cookie on top. Dust with confectioners' sugar before serving.
