Blanquette De Poulet is a classic French dish that translates to "white chicken stew". It is often made with bone-in chicken and a cream-based velouté sauce. This recipe uses boneless chicken meat and a lighter roux-based sauce for a slightly lighter dish. Blanquette De Poulet is a comforting and satisfying meal that is perfect for a cozy night in with family and friends. The creamy sauce and tender chicken create a delicious balance of flavors and textures.

Instructions

1.In a large pot, bring the chicken stock, salt, thyme leaves, and bay leaf to a boil.
2.Add in the boneless chicken meat, pearl onions, and julienned carrots. Simmer for 30 minutes or until the chicken is cooked through.
3.Remove the chicken and vegetables from the pot with a slotted spoon and set aside.
4.In a separate pan, melt the butter and whisk in the flour to make a roux. Slowly whisk in 2 cups of the chicken stock from the pot to create a velvety sauce.
5.In a small bowl, whisk together the egg yolks, lemon juice, and cayenne pepper. Slowly pour the egg mixture into the sauce, whisking constantly to prevent curdling.
6.Add the chicken and vegetables back into the pot with the velvety sauce and heat through. Serve with chopped parsley on top.
