Ingredients

4 chicken breasts
2 tablespoons chili powder
2 tablespoons paprika
1 1/2 teaspoons kosher salt

1 tablespoon red chili pepper flakes
3 limes , juice of
4 tablespoons fresh cilantro , minced
2 tablespoons Italian parsley , minced
25 blue corn tortilla chips , for garnish
1/2 cup caesar salad dressing ( or more to taste )
This Blackened Mexican Caesar Salad Recipe adds a spicy twist to a classic salad. Instructions

1.Preheat a grill to medium high.
2.In a small bowl, combine chili powder, paprika, kosher salt, black pepper, garlic powder, onion powder, garlic salt, thyme, white pepper, and cayenne pepper. Mix well.
3.Brush chicken breasts with vegetable oil, then coat each side with seasoning mixture.
4.Place chicken on the grill and cook for 5-7 minutes on each side, until internal temperature reaches 165°F.
5.Remove from grill and allow to rest for 5 minutes, then slice into strips.
6.In a large bowl, toss together minced romaine lettuce, diced tomatoes, diced avocadoes, Parmesan cheese, red chili pepper flakes, lime juice, cilantro, parsley, and Caesar dressing.
7.Add chicken strips to the bowl and toss everything to combine.
8.Serve salad topped with tortilla chips and tomato wedges for garnish.
