Ingredients

2 packets shortcrust pastry
500 g mashed potatoes
2 cooked chicken breasts , cut into small pieces
4 -6 cooked leeks
50 g cooked ham , cut into dice
3 -4 tablespoons creme fraiche or 2 -3 tablespoons cream
1/2 teaspoon mixed herbs
salt
pepper
1 egg , beaten with a little
milk
The Blackbird Pie (or Chicken, Leek and Potato Pie) is a classic British dish that's been around for centuries. It's said to be named after the blackbird bird that's often considered a gamefowl. This savory pie is typically made with a combination of chicken, leeks, and potatoes, and sometimes even ham or bacon. The filling is then encased in shortcrust pastry, which is rolled out and layered with the filling before being baked until golden brown. The pie is perfect for a cozy dinner with family and friends and can be served with a side of vegetables or salad.

Instructions

1.Preheat the oven to 200°C/400°F/gas 6.
2.Roll out the shortcrust pastry until it is big enough to cover the base and sides of a 24cm pie dish.
3.Trim the pastry and prick the base all over with a fork.
4.Layer the mashed potatoes, chicken, leeks and ham
5.inside the pastry case, sprinkle with mixed herbs, salt and pepper.
6.Mix the creme fraiche or cream with enough water to make a smooth spreading consistency and pour over the top of the pie.
7.Cover the pie with the remaining pastry, sealing the edges well.
8.Brush the top with a beaten egg mixed with a little milk and make a few holes in the top with a fork.
9.Bake for 30–35 minutes or until golden brown.
