Ingredients

500 g calf liver or 500 g lamb liver
1 granny smith apple , peeled and cored
2 slices rindless bacon , roughly chopped
125 g mushrooms , sliced
1/4 cup brandy ( optional )
1 teaspoon brown sugar ( optional )
2 tablespoons sour cream
lemon juice , to taste
salt , to taste
pepper , to taste
300 g frozen blackberries

Instructions

1.Cut liver into strips.
2.Fry bacon in a pan until crispy.
3.Add mushrooms, and stir for a couple of minutes.
4.Remove the bacon and mushrooms from the pan and set aside.
5.Add liver to the pan and fry over medium-high heat until cooked through, about 5-7 minutes.
6.Add salt, pepper, and brandy (optional).
7.Add brown sugar (optional) and blackberries to the pan.
8.Stir everything together being careful not to break up the blackberries and cook for a couple of minutes.
9.Remove from heat and add in the sour cream.
10.Squeeze lemon juice over the dish and serve hot.
