Ingredients

1/3 cup finely chopped shallot
1 finely chopped garlic clove
1/3 cup pinot grigio wine

16 ounces cheese gnocchi
1 teaspoon black truffle oil
1/2 teaspoon black truffle salt
1 tablespoon italian black pepper
1/4 cup of reserved pasta water
1 cup finely grated padano cheese
black sea salt ( to garnish )
shaved black truffle , not necessary ( to garnish )

Instructions

1.Bring a large pot of salted water to a boil on the stove and cook the gnocchi according to package instructions until just al dente. Reserve 1/4 cup of the pasta water before draining.
2.While the gnocchi is cooking, melt the butter in a large skillet over medium heat. Add the shallots and garlic, cooking until fragrant and softened for about 2-3 minutes. Pour in the pinot grigio and let it simmer and reduce slightly for another 2-3 minutes.
3.Add the black truffle oil, black truffle salt, and Italian black pepper to the skillet and stir until combined. Toss the cooked gnocchi into the skillet with the sauce, adding the reserved pasta water to thin out the sauce if necessary. Cook for an additional 2-3 minutes, or until the gnocchi is coated in the sauce to your liking.
4.Remove the skillet from heat and sprinkle the padano cheese over the top of the gnocchi, stirring until the cheese is melted into the sauce.
5.Garnish with shaved black truffle and black sea salt, if desired.
