Ingredients

1 teaspoon vegetable oil
1 onion , chopped
1/2 cup fresh curry leaves
2 tablespoons whole black peppercorns
2 tablespoons ground coriander
1/2 cup water
3 tablespoons vegetable oil
2 onions , thinly sliced
2 inch piece ginger , minced
5 cloves garlic , minced
2 tablespoons cayenne pepper , or amount to taste
1 tablespoon salt
1 tablespoon ground turmeric
1/2 cup tomato paste
1 pound goat stew meat , cut into 1-inch cubes
1/2 cup water
Black Pepper Goat Curry is a popular dish in India and other southeastern countries. It is a spicy and flavorful curry with the addition of freshly ground black peppercorns. Instructions

1.Heat 1 teaspoon of vegetable oil in a large pan over medium heat.
2.Add chopped onions, curry leaves, black peppercorns, and ground coriander. Cook until onions are translucent for about 5-7 minutes. Add 1/2 cup of water if the mixture seems to be sticking.
3.Remove the mixture from the pan and blend in a food processor to form a smooth paste.
4.Heat 3 tablespoons of vegetable oil in the same pan over medium heat.
5.Add thinly sliced onions, minced ginger, and minced garlic. Cook until onions turn golden brown for about 8-10 minutes.
6.Add cayenne pepper, salt, turmeric, and tomato paste. Stir well and cook for another 5-7 minutes.
7.Add goat stew meat and cook until meat is browned for about 8-10 minutes.
8.Add the blended paste from step 3 and 1/2 cup of water to the pan with the meat. Stir well and bring to a boil.
9.Reduce heat to low and let the curry simmer for 45-50 minutes until meat is tender and the curry has thickened. Serve hot with steamed rice or naan bread.
