Ingredients

Focaccia Dough
1 cup warm water
1 teaspoon white sugar
1 ( .25 ounce ) envelope rapid rise yeast
2 tablespoons olive oil
1/4 cup minced fresh rosemary
2 3/4 cups bread flour or all-purpose flour

Topping
3 tablespoons olive oil
2 large roma ( plum ) tomatoes , sliced
2 teaspoons minced garlic
2 tablespoons minced fresh rosemary
Salt and pepper
1/2 cup grated Parmesan or Romano cheese

Instructions

1.In a large bowl, combine warm water, sugar and yeast, let sit for 10 minutes to allow yeast to proof.
2.Add olive oil, rosemary, flour and salt to the bowl and mix everything together.
3.Once the mixture forms a dough, transfer it to a floured surface and knead for 5 minutes.
4.Place the dough into a greased bowl and cover with a clean dish towel an hour or until it doubles in size.
5.Preheat the oven to 425 degrees F and grease a 9 inch square baking dish.
6.Transfer dough to the greased baking dish and press the dough out until it covers the entire dish.
7.Use your fingers to create small dimples into the dough then place sliced tomatoes onto the top.
8.Drizzle olive oil, garlic, rosemary, salt and pepper over the tomatoes.
9.Sprinkle grated cheese over the top of the dough as well as the olives.
10.Bake for 20 minutes until the cheese is melted, the crust is golden brown and the bread sounds hollow when tapped. Serve warm.
