Ingredients

1/4 cup unsalted butter
2 tablespoons finely minced shallots
1 tablespoon finely minced garlic
1/2 lb mushroom , finely minced
1 cup riesling wine
1 cup beef broth
1 cup chicken broth
1 cup creme fraiche or 1 cup heavy cream
1 can escargot , drained and very finely minced ( reserve liquid )
1 tablespoon minced fresh chives
1 tablespoon minced fresh parsley
1/4 teaspoon finely ground anise seed
2 egg yolks , lightly beaten
2 teaspoons Pernod ( optional )
1 tablespoon unsalted butter , at room temperature
1 tablespoon sifted all-purpose flour
Black Forest Escargot Soup is a classic French delicacy that is perfect for a special occasion. Instructions

1.Melt 1/4 cup butter in a large saucepan over medium heat. Add shallot and garlic, and cook for 1 minute until soft, but not browned.
2.Add mushrooms and sauté for 5-8 minutes until they release their liquid. Increase heat to high and stir in the wine, beef broth, and chicken broth. Bring to a boil and reduce heat to low to simmer for 10-15 minutes.
3.Add creme fraiche or heavy cream, escargot, chives, parsley, and anise seed. Simmer for another 5-7 minutes until heated through.
4.In a separate bowl, whisk egg yolks and Pernod (if using). Whisk in 1/2 cup of the hot soup mixture into the egg yolk mixture. Stir the yolk mixture back into the soup pot and cook over low heat for 1-2 minutes until heated through. (Do not boil!)
5.In a separate small bowl, combine 1 tablespoon butter and flour until smooth. Add to the soup mixture, whisking constantly. Cook for an additional 5-7 minutes until thickened. Serve hot with a warm baguette.
