Ingredients

1 1/2 lbs ground beef
1 cup chopped onion
2 cans jalapeno black-eyed peas , drained
1/2 teaspoon garlic salt or 1/2 teaspoon garlic powder
1 can Rotel Tomatoes
1 can cream of chicken soup
1 can cream of mushroom soup
1 can enchilada sauce
1 carton sour cream
15 corn tortillas
3 cups grated cheddar cheese
salt and pepper

Loaded with ground beef, corn tortillas, jalapeno black-eyed peas, and tangy enchilada sauce, this casserole is an instant crowd-pleaser. Instructions

1.Preheat oven to 350°F. Grease a 9x13 inch baking dish
2.Brown ground beef with onion in a large skillet over medium heat until no longer pink. Drain excess grease.
3.Add the garlic salt/powder, drained jalapeno black-eyed peas, Rotel Tomatoes, cream of chicken soup, cream of mushroom soup, enchilada sauce, and sour cream. Mix well.
4.Place a layer of tortillas on the bottom of the baking dish. Top with a layer of the beef mixture followed by a layer of cheddar cheese. Repeat layers until all ingredients are used up.
5.Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until cheese is melted and bubbly.
