Ingredients

1/3 cup vegetable oil
1/3 cup all-purpose flour
2 tablespoons vegetable oil

1 1/2 teaspoons salt
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
2 bay leaves
1/2 pound cooked ham , cubed
1 can black-eyed peas

Instructions

1.Take a large pot, heat 1/3 cup of vegetable oil and stir in 1/3 cup of flour, cook and stir constantly until the mixture turns dark brown in color
2.Add in okra, onions, celery, and garlic. Cook and stir constantly for 5 minutes
3.Pour in 4 cups of water, chopped tomatoes, parsley, salt, thyme, cayenne pepper, black pepper, and bay leaves. Add cubed ham, cover the pot and let it simmer on medium flame for around 30 minutes
4.Open the can of black-eyed peas and pour into the pot, let it simmer for another 10 minutes
