5 cups stemmed fully ripe black currants ( about 2 qt . )
1/2 cup water
7 cups sugar
1 box Certo , pectin crystals

Instructions

1.Rinse and stem black currants.
2.In a large saucepan, combine black currants and water. Bring to a boil.
3.Combine sugar and Certo pectin crystals. Gradually stir into fruit mixture.
4.Return to a full rolling boil, stirring constantly. Boil for 1 minute.
5.Remove from heat and skim off foam.
6.Ladle hot jam into hot sterilized jars, leaving 1/4 inch headspace.
7.Wipe rims.
8.Tighten lids.
9.Invert jars for 5 minutes.
10.Turn upright and cool completely.
