Ingredients

1 teaspoon vegetable oil
1/2 cup minced onion
1/3 cup red wine
1 cup black currant jelly
2 oranges , zested and juiced
1 lemon , zested and juiced
1 tablespoon brown sugar
2 teaspoons freshly ground black pepper , or to taste
1/4 teaspoon mustard powder
1/4 teaspoon ground ginger
1 pinch cayenne pepper
salt to taste

Instructions

1.In a saucepan, heat the vegetable oil over medium heat until hot.
2.Add the minced onion and cook until softened and lightly browned, stirring occasionally.
3.Add the red wine and stir to scrape up any browned bits from the bottom of the pan.
4.Add the black currant jelly, orange juice and zest, lemon juice and zest, brown sugar, black pepper, mustard powder, ground ginger, cayenne pepper, and salt.
5.Bring the mixture to a simmer and let it cook until the sauce has thickened and is glossy, about 10 minutes.
6.Remove from heat and let the sauce cool before serving.
