Ingredients

1 cup dried black chickpeas ( garbanzo beans )
1 1/2 teaspoons salt , divided
1/2 teaspoon baking soda
1 quart water
1 onion , chopped
1 clove garlic , chopped , or more to taste
1 piece chopped fresh ginger
3 tablespoons water
3 tablespoons vegetable oil
1/4 teaspoon cumin seeds
2 pinches asafoetida powder
4 potatoes , peeled and quartered
1 teaspoon ground coriander
1 teaspoon garam masala
1/4 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
2 cups water
3 tablespoons tamarind paste , or more to taste

Instructions

1.Soak the dried black chickpeas overnight with 1 teaspoon of salt and baking soda mixed with water.

3.In another pan, heat vegetable oil over medium heat. Add cumin seeds and asafoetida powder and cook until seeds splutter.
4.Add onions and cook until they are transparent, then add chopped garlic and grated ginger. Cook for 1 minute more. Add potatoes and all spices except tamarind paste. Stir to mix and cook for 5 minutes.
5.Add two cups of water and stir well. Cover and cook on low heat until potatoes are done.
6.Pour tamarind paste into the pot and stir well. Cook for 2 minutes more. Remove from heat and serve hot with rice or bread.
