Ingredients

3/4 cup sugar , plus
2 tablespoons sugar
1 cup heavy cream
3 cups whole milk

unsweetened whipped cream , for garnish
finely chopped chocolate wafer cookie , for garnish

Instructions

1.Preheat the oven to 325°F and butter a 9-inch deep-dish pie plate.
2.In a medium saucepan, heat 3/4 cup sugar over medium heat until it melts and turns a dark amber color, stirring occasionally.
3.Remove from heat and whisk in the heavy cream. Be careful as it will bubble up.
4.In a large saucepan, whisk together the milk, cornstarch, eggs, 2 tablespoons sugar, vanilla and salt until smooth.
5.Cook over medium heat until it thickens, for about 10 minutes, stirring constantly.
6.Remove the pan from heat and stir in the chopped bittersweet chocolate until completely melted.
7.Pour half of the chocolate mixture into the prepared pie plate.
8.Add the caramel mixture to the remaining chocolate mixture and whisk until smooth.
9.Pour the caramel mixture onto the chocolate layer in the pie plate.
10.Bake for 30-40 minutes until it sets.
11.Allow to cool before refrigerating for at least 4 hours or overnight.
12.Serve chilled with a dollop of whipped cream and a sprinkle of chocolate wafer cookie crumbs.
