Ingredients

2 cups cooked black beans
1/2 cup water or 1/2 cup bean broth
1 tablespoon sunflower oil ( or olive oil )
1/4 cup scallion , sliced
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 cup chopped cilantro
1 teaspoon pureed chipotle pepper ( or 1/2 tsp . cayenne )
juice of 2-3 lemon
salt
This smoky and tangy dip is perfect for serving at parties or alongside Mexican-inspired meals. The flavors of the black beans, cilantro, and chipotle pepper combine to create a unique and satisfying taste. The dip can be made in advance and stored in the fridge for up to 3 days. It can be served with tortilla chips, vegetable sticks, or as a topping for tacos or burritos.

Instructions

1.In a skillet, heat the oil over medium heat. Add the scallion and cook for 1 minute.
2.Add the cooked black beans, the water or bean broth, the coriander, cumin, and pureed chipotle pepper to the skillet. Stir well.
3.Cook the black beans for 5-7 minutes over medium heat or until heated through.
4.Remove the skillet from the heat and let it cool for 5 minutes.
5.Add the chopped cilantro, lemon juice, and salt to the skillet. Mix well.
6.Transfer the black bean mixture to a food processor and blend until smooth.
7.Transfer the dip to a serving bowl and garnish with additional cilantro leaves and lemon wedges. Serve immediately.
