1 poblano chile , stems and seeds removed , thinly sliced
1 cup red onion , thinly sliced
1 tablespoon ground cumin
8 corn tortillas , 6-inch
8 large eggs
1/2 cup pico de gallo
1/4 cup cilantro leaf , loosely packed
1/4 cup queso fresco , crumbled ( fresh Mexican cheese )
1 avocado , thinly sliced
lime wedge , for serving

Instructions

4.Add the cumin to the skillet and cook for an additional 30 seconds.
5.Add the black bean mixture to the skillet and heat through, about 2-3 minutes.
6.In a separate skillet, heat the remaining 3 tablespoons of coconut oil over medium-high heat.
7.Add the tortillas to the skillet and cook until crispy, about 1-2 minutes per side.
8.In another skillet, fry the eggs to your desired doneness.
9.To assemble the tostados, spoon the black bean mixture onto each crispy tortilla.
10.Top each tostado with a fried egg.
11.Garnish with pico de gallo, cilantro, queso fresco, and avocado slices.
12.Serve with a lime wedge on the side.
