1 can black beans , undrained
1 can hominy , drained
1 can diced chilies , undrained
tortilla , of your preference
shredded sharp cheddar cheese

Instructions

1.In a large bowl, mix together black beans, hominy, and diced chilies.
2.Take a tortilla and place a handful of shredded cheese on one half. Add a few spoonfuls of the bean hominy mixture on top of the cheese and fold the tortilla in half, pressing it down lightly.
3.Heat a non-stick skillet over medium heat. Cook the quesadilla for 2-3 minutes on each side or until the cheese is melted and the tortilla is golden brown.
4.Repeat with the remaining tortillas and bean hominy mixture.
