9 lasagna noodles
15 ounces ricotta cheese
10 ounces frozen chopped spinach , thawed and squeezed dry
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
1/4 teaspoon salt

1 egg

1/2 cup chopped bell pepper ( I use red or orange )
2 garlic cloves , minced
1/4 teaspoon crushed red pepper flakes ( optional )
15 ounces black beans
16 ounces refried black beans
15 ounces tomato sauce
8 ounces mozzarella cheese , shredded
1/4 - 1/3 cup parmesan cheese
This Black Bean and Spinach Lasagna is a delicious and healthy twist on the classic Italian dish. Instructions

1.In a bowl, combine the ricotta cheese, spinach, basil, oregano, salt, pepper, and egg.
2.In a large skillet, sauté onions, bell peppers, garlic, and red pepper flakes until tender.
3.Add black beans and tomato sauce to the skillet and bring the mixture to a boil.
4.To assemble the lasagna, spread 1/4 cup of the bean mixture in the bottom of a greased 9x13 inch baking dish.
5.Layer with 3 lasagna noodles, 1/3 of the bean mixture, and 1/3 of the ricotta mixture.
6.Repeat layers twice more and top with shredded mozzarella and parmesan cheese.
7.Cover the dish with foil and bake for 30 minutes.
8.Remove foil and bake for another 10 minutes or until the cheese is melted and bubbly.
