Ingredients

1 butternut squash - peeled , halved lengthwise , and seeded
3 tablespoons vegetable oil
1 small onion , diced
3 cloves garlic , minced

2 cans black beans , rinsed and drained
12 ounces shredded Cheddar cheese , divided
2 cans mild enchilada sauce
8 flour tortillas , or more if needed
Black Bean and Butternut Squash Enchilada Casserole is a hearty and nutritious dish that is perfect for a satisfying dinner. Instructions

1.Preheat the oven to 375°F. Grease a 9x13 inch baking dish with cooking spray.
2.Cut the butternut squash into small cubes and place them on a baking sheet. Drizzle with 1 tablespoon of vegetable oil and toss to coat. Roast in the preheated oven for 30 minutes until tender.
3.In a large skillet, heat the remaining 2 tablespoons of vegetable oil over medium-high heat. Add the diced onion and minced garlic. Cook for 2-3 minutes until the onion is translucent. Add the ground cumin, ground coriander, and cayenne pepper (if using) and stir to combine.
4.Add the black beans to the skillet and stir to combine with the onion and spice mixture. Turn off the heat.
5.Spread a thin layer of enchilada sauce in the bottom of the greased baking dish. Add a layer of tortillas, tearing them into smaller pieces to fit if necessary. Top with a layer of the black bean mixture, roasted butternut squash, and shredded cheddar cheese. Repeat the layers until all the ingredients are used up, ending with a layer of cheese on top.
6.Bake the enchilada casserole for 25-30 minutes until the cheese is melted and bubbly. Remove from the oven and let sit for 5 minutes before serving.
