1 1/2 cups whole almonds , skinned , toasted
9 ounces bittersweet chocolate ( or Mexican )
1 orange , zest of , finely grated
2 1/4 teaspoons cinnamon
5 large eggs , separated , room temperature
6 tablespoons sugar
1/4 teaspoon salt
1/4 cup heavy cream
2 tablespoons unsalted butter

Instructions

1.Preheat oven to 350°F.
2.Line bottom of 9-inch-diameter cake pan with parchment paper; butter and flour sides of pan.
3.Combine toasted almonds, chocolate, orange zest, and cinnamon in processor and grind until nuts are finely ground, about 45 seconds.
4.Using electric mixer, beat egg yolks and 3 tablespoons sugar in large bowl until mixture is pale yellow in color and very thick, about 5 minutes.
5.Beat in almond-chocolate mixture.
6.Using clean dry beaters, beat egg whites in another large bowl until soft peaks form.
7.Gradually add remaining 3 tablespoons sugar, beating until stiff but not dry.
8.Fold whites into chocolate mixture in 3 additions.
9.Transfer batter to prepared pan.
10.Bake cake until tester inserted into center comes out with moist crumbs attached, about 35 minutes.
11.Cool cake in pan on rack.
