Ingredients

1/2 cup Irish whiskey
2 tablespoons Irish whiskey
6 ounces bittersweet chocolate
2 teaspoons instant espresso powder , dissolved in
6 tablespoons hot water
1/3 cup blanched almond , lightly toasted
6 tablespoons all-purpose flour , divided
3/4 cup unsalted butter , room temperature , divided
7 tablespoons vanilla sugar , divided
3 large eggs , separated
1 pinch fine sea salt
2 ounces semisweet chocolate , chopped

This rich and moist cake is infused with the flavors of Irish whiskey and dark chocolate, and topped with a dollop of whipped cream. Instructions

1.Preheat the oven to 325°F. Butter an 8-inch round cake pan and line the bottom with parchment paper.
2.In a small bowl, combine the Irish whiskey and instant espresso powder and stir to dissolve. Chop the bittersweet chocolate and melt it with 6 tablespoons unsalted butter over a double boiler.
3.In a food processor, grind the blanched almonds with 2 tablespoons all-purpose flour until finely ground. In a large bowl, cream 6 tablespoons unsalted butter and 5 tablespoons vanilla sugar until light and fluffy.
4.Add the egg yolks one at a time, beating after each addition. Mix in the melted chocolate, whiskey/espresso mixture, and ground almonds until well combined.
5.In another large bowl, beat the egg whites and salt until firm peaks form. Gradually add in the remaining 2 tablespoons vanilla sugar and continue beating until glossy.
6.Fold the egg whites into the chocolate mixture in 3 additions, alternately folding in the remaining 4 tablespoons all-purpose flour each time. Fold in the chopped semisweet chocolate.
7.Pour the batter into the prepared pan and smooth out the top. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
