8 ounces bittersweet chocolate , very finely chopped ( not unsweetened )
1/2 cup heavy cream
2 tablespoons creme de cassis
1/2 cup unsweetened cocoa powder , preferably Dutch-process

Instructions

1.Add the chopped chocolate to a mixing bowl and set aside.

6.With clean hands, form small balls from the cooled mixture.
7.Roll each ball in cocoa powder until it is fully coated.
8.Place the truffles in an airtight container and store in the refrigerator for up to 1 week.
