Bite Back Pickled Onions are a popular condiment in many countries, particularly in the UK and the US. They are easy and quick to make, with a zesty flavor that enhances many dishes. These onions are low in calories, fat, and sugar, making them a healthy addition to any meal. Their tangy taste comes from the vinegar, which acts as a natural preservative, increasing the shelf life of the onions. This recipe includes red chilies for an extra kick of heat, but the spice level can be adjusted to taste.

Instructions

1.Peel and rinse the onions, then pack them tightly into a clean 1 litre jar.
2.In a large saucepan, heat the vinegar, chilies, garlic, black peppercorns and salt over medium heat.
3.Stir the mixture occasionally until salt dissolves completely.
4.Remove the pan from the heat and pour the mixture over the onions in the jar, ensuring that the onions are fully submerged.
5.Let the jar cool to room temperature, then cover and refrigerate for at least 48 hours before serving.
