Ingredients

2 1/2 lbs russet potatoes , scrubbed ( about 4 large )
2 tablespoons cornstarch
3 quarts peanut oil
1 tablespoon vegetable oil
2 steaks ( boneless strip or rib-eye )
kosher salt & fresh ground pepper , to taste
4 tablespoons unsalted butter , softened
2 tablespoons medium shallots , minced
1 garlic clove , minced
1 tablespoon fresh parsley leaves , minced
1 tablespoon fresh chives , minced
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Instructions
