Bisteeya is a classic Moroccan dish that is traditionally served during special occasions such as weddings, feasts, and festivals. It's a savory pastry that is filled with chicken, spices, and almonds, and then topped with a sweet cinnamon and sugar mixture. The dish has a complex flavor profile, with sweet, salty, spicy, and savory notes. It's a labor-intensive dish that requires a lot of time and effort to prepare, but the end result is well worth the effort. Bisteeya is a perfect dish to serve when you want to impress your friends and family with your culinary skills!

Instructions

.Preheat the oven to 375°F (190°C).
.In a large pot, combine the chicken thighs, chopped onion, garlic, 1/2 cup of parsley, salt, turmeric, ginger, chicken broth, and cinnamon sticks. Bring to a boil and then reduce the heat to low for about 1 hour, or until the chicken is cooked.
.Remove the chicken from the pot and set it aside. Remove the cinnamon sticks and reduce the sauce by half until it becomes thick.
.Shred the chicken into small pieces and mix in a bowl with 1/2 cup of the reduced sauce, the remaining chopped parsley, and the slivered almonds.
.In a separate bowl, beat the eggs and then mix with the lemon juice.
.Place the phyllo dough on a baking sheet and spray each sheet with butter-flavored cooking spray. Layer six sheets on top of each other, and then add the chicken mixture on top of the phyllo dough. Then add another six phyllo sheets on top of the chicken.
.Pour the egg mixture over the top of the phyllo layers.
.Bake the Bisteeya for approximately 20-25 minutes, or until golden brown and crispy.
.In a separate bowl, mix together the powdered sugar and ground cinnamon. Sprinkle over the Bisteeya and serve.
