Ingredients

1 1/2 lbs skirt steaks , trimmed and cut into 4 equal portions
1 1/2 tablespoons vegetable oil plus 1 tablespoon vegetable oil ( for cooking )
2 garlic cloves , minced
1/2 tablespoon prepared mustard
1 tablespoon ground cumin
salt & freshly ground black pepper
2 tablespoons fresh cilantro , chopped
3 tablespoons vegetable oil
1 cup green onion , chopped ( about 5 stalks )
2 cups fresh tomatoes , chopped ( about 3 plum tomatoes )
1 garlic clove , minced
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup fresh cilantro , chopped

Instructions

1.Preheat the oven to 400 degrees F.
2.In a bowl, mix together the minced garlic, mustard, cumin, 1 1/2 tablespoons of vegetable oil, salt, pepper, and cilantro. Rub this mixture thoroughly onto both sides of the skirt steak pieces, then set aside.
3.In a skillet over medium heat, add in 1 tablespoon of vegetable oil and sear the steak pieces for 3-4 minutes on each side until browned.
4.In a separate pot, heat 3 tablespoons of vegetable oil over medium-high heat. Add in the chopped green onions, garlic, and tomatoes, and season with cumin, salt, and pepper. Cook for 5 minutes until the vegetables are soft and fragrant.
5.Transfer the seared steak pieces to the pot with the tomato sauce mixture, and bake in the oven for 10-12 minutes until the steak is cooked through. Sprinkle with additional cilantro before serving.
