2 lbs lamb shoulder , cut into 2-inch cubes
4 cups water
2 teaspoons salt
1/4 teaspoon pepper
1 bay leaf
3 medium carrots , cut into 1-inch slices
1 medium onion , thinly sliced
1 medium potato , pared and cut into 1-inch cubes
1 cup peas
2 tablespoons Bisquick baking mix
1/4 cup water
2 cups Bisquick baking mix
1/4 cup snipped parsley
2/3 cup milk

Instructions

1.Heat shortening in a Dutch oven or large pot. Do not allow smoke.
2.Brown lamb cubes in hot shortening.

4.Add carrots, onion, and potato. Cover; simmer 30 minutes.
5.Add peas. Mix Bisquick and water; drop by spoonfuls onto hot stew. Cover; simmer 15 minutes. Sprinkle with parsley.
6.To make the dumplings, combine Bisquick, milk, and parsley until a soft dough forms. Drop spoonfuls of the dough on top of the stew. Cover and simmer an additional 15 minutes until the dumplings are cooked through.
