Ingredients

3 lbs bison round roast or 3 lbs buffalo roast
1 package Lipton Onion Soup Mix
2 medium potatoes , cut into cubes
1 medium onion , sliced
1 medium green pepper , sliced ( I do n't use this )
3 large carrots , peeled and cut in one inch cubes

Instructions

1.Preheat oven to 450F.
2.Rub the onion soup mix on both sides of the roast.
3.Place the roast in a roasting pan and add enough water to just cover the bottom of the pan.
4.Add the potatoes, onions, green pepper, and carrots around the roast.
5.Cover the roasting pan tightly with foil.
6.Bake for 30 minutes at 450F.
7.Reduce the oven temperature to 350F.
8.Bake for 2-3 hours or until the roasting meat is tender.
9.Baste the roast occasionally with the pan drippings.
10.Remove the foil from the roasting pan and bake for 15 more minutes to brown the top of the roast.
11.Remove the roast from the oven and let it rest for 15 minutes before carving.
