2 ounces butter
2 eggs
1/2 cup milk , lukewarm
4 ounces sugar
5 ounces self rising flour
1 cup mixed fruit

Instructions

1.Preheat the oven to 180C/350F/Gas 4.
2.Grease a 7.5 inch x 4 inch/19cm x 10cm loaf tin.
3.In a mixing bowl, beat the butter and sugar together until smooth.
4.Add the eggs, warm milk, self raising flour and mixed fruit. Mix until well combined.
5.Pour the mixture into the prepared loaf tin and smooth the top with a spatula.
6.Bake in the preheated oven for 40-45 minutes or until a skewer inserted into the bread comes out clean.
7.Remove from the oven and leave to cool in the tin for 10-15 minutes before turning out onto a wire rack to cool completely.
