2 cups coarse semolina
1 1/2 cups caster sugar
500 ml natural yoghurt
1/2 cup desiccated coconut
3 tablespoons margarine or 3 tablespoons butter
1 teaspoon baking powder
2 cups boiling water
1 teaspoon lemon juice
Bishbosa is a traditional Iraqi dessert that can be prepared in no time for a sweet, satisfying treat. Instructions

1.Preheat your oven to 180C/350F and grease a 9x13 inch baking dish.
2.In a large mixing bowl, combine the semolina, sugar, yoghurt, coconut, margarine, baking powder, and lemon juice until well combined.
3.Gradually add in the boiling water, stirring continuously until the mixture becomes smooth.
4.Pour the batter into the prepared baking dish and smooth the surface using a spatula.
5.Bake for 35-40 minutes or until golden brown.
6.Remove from the oven and let the Bishbosa cool down completely before slicing and serving.
