Bisabuelita's Crock Pot Refried Beans recipe is a classic comfort food in Mexican cuisine. It is often accompanied by rice and a variety of toppings like cheese, salsa, and guacamole. This vegetarian version is perfect for those looking for a meatless option with authentic flavor. Bisabuelita, meaning great-grandmother, is a term of endearment in the Mexican culture and typically refers to the oldest and most knowledgeable members of the family who pass down recipes and traditions to the younger generations. The crockpot method used in the recipe ensures that the beans are cooked to tender perfection while infusing all the flavors from the seasonings. The slight creaminess from the butter adds a nice touch to the thick and hearty texture of the beans.

Instructions

1.Rinse the beans in a colander and remove any debris like stones or shriveled beans.
2.In the crockpot, add the beans, garlic, onions, bay leaf, black pepper, cumin powder, Mexican oregano, and liquid smoke. Cover the beans with water about 2 inches above the beans. Stir and cover with a lid.
3.Cook the beans on high for 6 hours or low for 8-10 hours. You know beans are done by their tenderness.
4.Once the beans are tender, remove half of the liquid from the beans using a ladle. Combine the liquid in a bowl and save it.
5.Begin mashing the beans with a potato masher or a fork, and gradually add the cooking liquid until you have the desired creaminess. Some prefer chunky mashed beans and some prefer smoother ones.
6.In a saucepan, heat the butter and oil on medium heat until the butter melts. Add the minced onion and sauté until it's light golden-brown, about 3-4 minutes. Now add the mashed beans to the saucepan and stir. Season with salt and continue to cook for about 10-15 minutes.
7.Finally, serve the refried beans with a sprinkle of scallions and some shredded sharp white cheddar cheese on top. They taste best with some warm tortillas or Mexican rice on the side!
