Ingredients

1 tablespoon olive oil
1 onion , chopped
3 cloves garlic , minced
2 cans tomato sauce
5 tomatoes , chopped
12 mushrooms , sliced
1 small bell pepper , chopped
2 stalks celery , chopped
2 carrots , shredded
2 small zucchini , sliced
1 can tomato paste
1/4 cup red cooking wine
1 tablespoon soy sauce
1/2 teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried sage
2 bay leaves

Instructions

1.Over medium high heat, saute onions and garlic in olive oil until fragrant and light brown.
2.Add tomato sauce and chopped tomatoes stir and bring to a simmer.
3.Add mushrooms, bell pepper, celery, carrots, and zucchinis. Stir to combine.
4.Add in tomato paste, red wine, and soy sauce and mix until well combined.
5.Stir in black pepper, basil, oregano, sage and bay leaves. Cover and lower the heat.
6.Let the sauce simmer for 30 to 40 minutes or until the vegetables are tender.
7.Remove the bay leaves before serving.
