Ingredients

1/4 lb currants
1/2 lb raisins
1/2 lb sultana
1/4 lb mixed peel
6 ounces butter
1/2 lb fresh breadcrumb ( approx crumbs from 1 large loaf white bread )
1/2 lb brown sugar
1 tablespoon mixed spice ( or cinnamon )
1 small lemon , juice and rind of
1 teaspoon nutmeg
2 eggs
1/2 cup brandy or 1/2 cup rum
Bink's Traditional Aussie Chrissy Pud is a beloved Australian dish originating from the United Kingdom. Typically served during the holiday season, it is a spiced and fruity pudding that takes six hours of steam to fully prepare. The moist texture and delicate flavor of the pudding represent a delicious and long-standing tradition of the holiday season.

Instructions

1.Soak the currants, raisins, sultanas and mixed peel in brandy or rum overnight.
2.Cream the butter and brown sugar until light and fluffy.
3.Add beaten eggs, lemon rind and juice, and nutmeg to the mixture.
4.Fold in the breadcrumbs, mixed spice, and the soaked fruit.
5.Grease a 2 litre (8 cup) pudding basin then spoon the mixture into the basin. Cover with buttered foil and secure with string.
6.Place the basin into a large saucepan and fill the saucepan with boiling water until it reaches two-thirds up the pudding bowl.
7.Steam for 6 hours adding extra boiling water as required.
