1 package chicken tenders , cut across into bite size pieces
15 -20 medium shrimp , cleaned , uncooked ( fresh or thawed )
3 green onions , white and tender green parts , sliced across
1 cup frozen peas , steamed in micro for three minutes then drained
1 box chicken stock
1 bay leaf
1 tablespoon saffron
2 -3 garlic cloves , chopped
2 teaspoons red pepper flakes ( or to taste )
1 tablespoon paprika
1 -3 tablespoon olive oil
1 -2 teaspoon salt and pepper ( or to taste )
1 lemon , cut into wedges

Instructions

1.Heat 1-2 tablespoons olive oil in a large skillet over medium-high heat.
2.Add diced white onion and red bell pepper, and cook until softened, about 5-7 minutes.
3.Add the chopped garlic, red pepper flakes, and paprika; stir to combine.
4.Add the long grain rice and stir to coat with the oil and spices.
5.In a small pot, bring the chicken stock to a simmer and add the saffron and bay leaf.
6.Pour the chicken stock into the skillet and bring to a boil.
7.Reduce heat to low, cover, and let the rice simmer for 15-18 minutes, or until cooked through.
8.In the same skillet, heat 1 tablespoon olive oil over medium heat.
9.Add the sliced sausage and chicken tender pieces, and cook until browned and cooked through, about 8-10 minutes.
10.Add the uncooked shrimp and cook until pink and curled, about 3-5 minutes.
11.Once the rice is cooked through, add the cooked meat and seafood mixture, along with the steamed peas and sliced green onions.
12.Toss to combine and let cook for an additional 2-3 minutes, or until heated through.
13.Serve hot, garnished with lemon wedges and additional sliced green onions, if desired.
