3 cans low sodium chicken broth
4 cups shredded cooked chicken
1/2 lb andouille sausage , cut into 1/4 inch thick slices ( can sub smoked sausage )
1 1/2 cups frozen black-eyed peas , thawed ( this is untraditional and optional )
1 lb peeled large raw shrimp

Instructions

1.In a large pot, heat vegetable oil over medium-high heat.

3.Add onion, bell pepper, celery, creole seasoning, and garlic. Cook for 5-7 minutes or until vegetables are tender.
4.Gradually whisk in chicken broth, scraping any browned bits from the bottom of the pot. Add chicken, sausage, and black-eyed peas (if using). Bring to a simmer and let cook for 30-40 minutes.
5.Add shrimp and cook for an additional 5-7 minutes or until shrimp is pink and cooked through.
6.Serve hot gumbo over a bed of white rice.
