Ingredients

8 cups Spanish rice ( see my recipe )
1 lb ground beef
1 teaspoon cumin
1 teaspoon chili powder
12 corn tortillas
3 cups cheddar cheese , grated
1 can chili beans
1 can black beans
1 can pinto beans
1 cup frozen corn ( may use canned corn )
1 can tomato sauce
1 can Rotel Tomatoes
1 can diced green chilies

Instructions

1.Brown ground beef in a skillet. Add cumin and chili powder.
2.Drain any excess fat from the skillet.
3.Add chili beans, black beans, pinto beans, tomato sauce, Rotel Tomatoes, and green chilies.
4.Mix in the frozen or canned corn.
5.Layer corn tortillas in the bottom of a large crockpot.
6.Add a layer of Spanish rice on top of the tortillas.
7.Spoon half of the meat mixture over the rice.
8.Top with half of the grated cheddar cheese.
9.Repeat the layers with the remaining ingredients.
10.Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, or until the cheese is melted and the casserole is heated through.
