Ingredients

1 large apple ( Granny smith seems to be best )
300 g wine-cured sauerkraut , drained ( you can use normal sauerkraut but is better with wine sauerkraut )
150 g creme fraiche
12 slices bacon ( thin slices )
900 g thin pork fillets , 6 fillets ( about 1/2 cm thick )
toothpick
2 tablespoons vegetable oil
500 ml malt beer ( Malzbier )
1 liter vegetable broth
1 tablespoon cornstarch ( we usually just use something called sauce thicker )
The Bierkutscher Rouladen is a traditional German dish that was popular among carriage drivers, or coachmen, who would consume it as a means of keeping themselves full and satisfied during long journeys. This dish combines some of the most popular ingredients in German cuisine, such as cured sauerkraut, pork, and beer, and was originally cooked over open fires. Today, it is a staple in many German households and is often served with potatoes or spaetzle. The dish also has a rich history, as it dates back to the 17th century, when the carriage drivers would travel between Poland and Germany and would incorporate local ingredients into their meals along the way.

Instructions

1.Preheat oven to 150C
2.Peel apple, core and cut into eight wedges. Drain wine-cured sauerkraut and mix with creme fraiche.
3.Place each pork fillet between 2 sheets baking paper and beat with a flat meat mallet until 1/4 cm thick.
4.Place a slice of bacon onto each fillet. Distribute sauerkraut along the edge of each fillet and place 2 apple wedges on top along the edge. Roll up the fillets firmly and secure with toothpicks.
5.Heat oil in a large, heavy-bottomed casserole dish. Fry roulades in the oil until browned all over. Pour over malt beer and vegetable broth. Bring to a boil. Cover, place in the oven and cook for approximately 1.5 hours.
6.Remove roulades from the dish and keep warm. Strain the sauce and return to the dish. Bring to a boil, add cornstarch and whisk until smooth. Reduce heat and gentle simmer until the sauce thickens. Strain again and serve.
