Ingredients

1 cup long-grain rice
1 onion , peeled and cut into slices
1 bay leaf ( tej patta )
3 cardamoms ( elaichis )
1/2 inch cinnamon
1/2 teaspoon turmeric powder
2 tablespoons ghee or 2 tablespoons clarified butter
Bhuga Chawar is a classic rice dish from the Indian state of West Bengal. It is a simple rice preparation that derives its flavor from the caramelized onions. Instructions

1.Wash the rice and soak it in enough water for about 30 minutes.
2.Peel and slice the onion thinly.
3.Heat ghee in a heavy-bottomed pan. Add bay leaf, cinnamon and cardamom. Saute the spices for 30 seconds or until fragrant.
4.Add the sliced onions and saute for 8-10 minutes or until they turn translucent and soft.
5.Drain the water from rice and add the soaked rice to the pan. Fry the rice along with the onion mix for 2-3 minutes.
6.Add turmeric powder, salt and 2 cups of water. Mix everything well.
7.Cover the pan with a tight lid and cook the rice on low heat for 20-25 minutes or till all the water is absorbed and rice is cooked through.
8.Take off the heat and let the rice rest for 5 minutes.
9.Fluff it up with a fork and serve hot with your favorite curry or raita.
