Ingredients

2 1/4 lbs leg of lamb
5 tablespoons cooking oil ( I reduce this by about half , and watch the pan carefully )
3 large onions , finely chopped
4 cloves garlic , peeled and crushed
1 inch ginger
1 teaspoon ground turmeric
2 teaspoons ground cumin
1 tablespoon ground coriander
1/2 - 1 teaspoon red chili powder
7 fluid ounces water
1 1/2 teaspoons salt , to taste
2 medium tomatoes , skinned and chopped ( tinned tomatoes can be and are used )
4 -5 whole fresh green chilies ( seeds removed or less chillies for a milder curry )
1 teaspoon garam masala
1 tablespoon chopped fresh cilantro
2 small ripe Italian tomatoes , sliced
Bhoona Gosht is a hearty and spicy curry dish that originated in North India. Made with tender pieces of lamb, this curry is slow-cooked with onions, garlic, ginger, and a blend of aromatic spices. The result is a rich and flavorful dish that is perfect for any occasion. This recipe can be adjusted to suit your taste preferences - adding more green chilies will make it spicier, while reducing the chili powder will make it milder. Serve with a side of naan bread or steamed rice for a complete meal.

Instructions

1.In a large pot, heat the cooking oil over medium heat.
2.Add the chopped onions, garlic, and ginger. Fry until the onions turn golden brown.
3.Add in the spices - turmeric, cumin, coriander, and red chili powder. Mix well and cook for a minute.
4.Then add the lamb and water. Stir well to combine.
5.Add the salt and tomatoes. Mix again and cover the pot with a lid.
6.Cook until the lamb is tender, stirring occasionally. This may take up to 45 minutes.
7.Once the lamb is almost cooked, add in the green chilies and garam masala. Mix and continue to cook for a few more minutes.
8.Turn off the heat and garnish with fresh cilantro and sliced tomatoes.
9.Serve hot with naan bread or steamed rice.
