Ingredients

100 g butter , softened
250 g plain flour
75 g currants
50 g mixed citrus peels
1 1/2 teaspoons baking powder
75 g golden caster sugar
150 150 ml sour cream or 150 ml creme fraiche
1 egg , beaten
glace cherries , for decoration
blanched almond , for decoration ( whole )
Betty's of York Tea Room's Fat Rascals are a delicious cross between a fruit bun and a scone, originating from the famous Betty's Café Tea Rooms in York, England. These tasty buns are perfect for breakfast, afternoon tea, or simply as a sweet treat any time of day. With a buttery and crumbly texture mixed with juicy currants and zesty citrus peels, these buns are a must-try for any foodie!

Instructions

1.Preheat the oven to 200°C/180°C fan/gas Mark 6.
2.Rub the butter into the flour with your fingertips.
3.Stir in the currants, mixed citrus peel, baking powder and sugar.
4.Mix in the sour cream (or crème fraîche) and enough beaten egg to form a soft, slightly sticky dough.
5.Divide into six equal pieces and shape each into a round bun shape, about 3cm thick.
6.Place on a greased baking sheet and decorate the top of each bun with cherries and almond nibs.
7.Bake for approximately 20 minutes or until well risen and golden brown.
8.Cool on a wire rack and serve warm with butter, jam and clotted cream.
