This recipe is a copycat of Olive Garden's version of the soup, but many variations exist. The use of quality ingredients like fresh kale, bacon, and heavy cream add a rich flavor and texture to the soup, making it a fan favorite.

Instructions

1.In a large pot, cook the Italian sausage over medium heat until browned and cooked through. Drain any excess grease.
2.Add the diced potatoes, crushed red pepper flakes, and olive oil to the pot. Stir to combine and cook for 5-7 minutes, until the potatoes are slightly softened.
3.Add the chopped onions and minced garlic to the pot and cook for an additional 2-3 minutes, until the onions are translucent and fragrant.
4.Add the bacon pieces, 9 cups of water, and chicken base to the pot. Increase the heat to high and bring the soup to a simmer.
5.Reduce the heat to medium and continue to simmer the soup for 10-15 minutes, until the potatoes are fully cooked.
6.Stir in the kale and heavy cream, and continue to simmer for an additional 5-7 minutes, until the kale is wilted and the soup is heated through.
7.Season the soup with salt and pepper to taste, and serve hot with shredded pecorino romano or parmesan cheese on top if desired.
