Ingredients

1 package boneless skinless chicken breasts
2 eggs
1/2 cup milk
salt and pepper ( to taste )
Italian salad dressing ( I use the bottled Olive Garden dressing )
Italian breadcrumbs
flour
2/3 cup vegetable oil
1/3 cup olive oil
2 cups shredded mozzarella cheese
1 jar pasta sauce ( I use Ragu Robusto Parmesan and Romano )

Instructions

1.Preheat oven to 375°F.
2.Cut chicken breasts in half lengthwise, creating 4 thin cutlets.
3.In a shallow dish, whisk eggs, milk, salt, and pepper together.
4.In a separate shallow dish, mix Italian dressing, breadcrumbs, and flour together.
5.Heat vegetable oil and olive oil in a large skillet over medium-high heat.
6.Dip chicken cutlets into egg mixture then coat in breadcrumb mixture.
7.Fry chicken until golden brown, approximately 3-4 minutes per side.
8.Place chicken cutlets in a baking dish and cover each piece with pasta sauce.
9.Top with mozzarella cheese and bake in the oven until cheese is melted and bubbly, approximately 15-20 minutes.
